Protectors (LAB): 1 Part Rice Wash, 10 Parts Milk
Dr. Hoon Park, Physician; works at the University of the Nations in Kona (as he says); student of Master Cho · USA (Hawaiʻi)
Dr. Hoon Park shows a crowd on the lawn how to make Protectors (LAB) at a glass-jar table: sour rice-wash serum goes into milk at 1 part to 10, sits covered in the shade for five days, and the yellowish liquid under the curd is strained off and stored. He gives the 1:1000 spray rate, warns against spraying just before a fruit harvest, and tells how he drinks it himself, then answers questions on other milks, animals and the leftover curd. The last two minutes cut to another station, where an unnamed presenter recaps the recipe.
What they found
How do you make, store and use Protectors (LAB) from rice-wash water and milk?
Rice wash (step one): the recording starts mid-step. He gently scoops off and throws away the top layer; the cloudy, whitish, sour-smelling water underneath is the LAB. How the rice wash was made, its container, how full, and how long it sat are not stated in what survives. Milk (step two): one gallon of milk, raw best ('John Caverly's farm' fresh milk ideal), Walmart pasteurized 'still works okay' (about $5.43 a gallon, as he recalled). Into an empty one-gallon glass jar put only 2.5 quarts (he treats this as 2.5 litres, 2,500 ml) of milk, not the full four quarts. Add 10% of that, 250 ml (half a 500 ml water bottle) of the step-one serum: 1 part serum to 10 parts milk. Cover the mouth (cloth/paper and a rubber band, as shown) and set it 'the same side' as the first LAB: shaded, room temperature, out of direct sunlight. Five days in tropical Hawaiʻi; longer in cold places. Ready when about an inch-thick whitish curd has formed, one lump 'almost like a tofu', sour smell, tastes like yogurt or cottage cheese. Separating: strain through cheesecloth or a paint-strainer bag (about $4, Ace Hardware); tilt the jar so the liquid runs out and the curd stays behind. The yellowish, slightly cloudy, sour liquid is the finished LAB. Storage: refrigerator, 'many months'; or for room temperature mix 1:1 with molasses, or 'almost one to one' with brown sugar, 'many months'. Use: 1:1000 as a plant spray, 1 cc per litre or quart. Leftover curd: eat it, feed it to animals, or put it in the ground. Not stated: the rice-wash recipe and timing, temperatures, how to judge a failed batch beyond the next station's 'no colorful stuff on top, make sure the top is white'.
- Plant spray — LAB at 1:1000 (1 cc per litre or quart); any stage from seedling to growth; not about two weeks before a fruit harvest
- Human use (his own practice) — 1–2 tablespoons of LAB in a glass of water with or after a meal; he says he takes 10–15 times more than 1:1000
- Room-temperature storage — LAB mixed 1:1 with molasses, or about 1:1 with brown sugar
-
250 ml of rice-wash serum into 2.5 litres of milk: a 10% (1:10) addition
He works the arithmetic out with the crowd; half a 500 ml water bottle.

- One demonstration; the opening of the rice-wash step is cut off, so its recipe and timing are missing.
- He treats 2.5 quarts and 2.5 litres as the same; the 10% ratio holds either way, but a US quart is about 0.95 litres.
- In the exchange at 3:08 someone calls 250 ml 'one pint'; 250 ml is about one cup.
- The health claims (his stomach, the Crohn's patient, the 10-minute relief) are personal anecdotes, not trials, and not medical advice. He says so: 'not my research-derived data, but it's just my own experience'.
- The pig-farm numbers come from an internet article recalled from memory; unverified.
- He hasn't tried soy or other non-dairy milks; goat milk he says is fine.
- The last two minutes are a different station and speaker, cut in.
- Add the sour rice-wash serum to milk at 1 part to 10, cover it, and leave it in the shade.
- In Hawaiʻi, expect the curd in about five days; colder weather takes longer.
- Keep the yellowish liquid, not the curd; the curd can go to animals or into the soil.
- Refrigerate it, or mix it 1:1 with brown sugar or molasses to keep it at room temperature.
- Spray at 1:1000, and ease off as fruit nears harvest to protect sweetness.
- A $4 paint-strainer bag works as a strainer.

1 part rice-wash serum to 10 parts milk His 250 ml into 2.5 litres is exactly Cho's 10:1 milk to rice water. Cho also says low-temperature pasteurized store milk is okay, milk from cows not fed antibiotics is best.

Covered, in the shade, five days Cho covers the rice wash with handmade paper in the shade, and gives the milk 5~7 days at 23~25°C before the curd floats and the light-yellow serum sits below. Park's five days in Hawaiʻi fits the short end.

Fridge, or the same amount of brown sugar for room temperature Cho: store the yellow liquid in a refrigerator; to keep it at room temperature mix it with the same amount of brown sugar. Park's molasses option is his own variation; Cho names brown (crude) sugar.

0:00 Dr. Hoon Park: Kind of gently scoop it out and throw away. So that's not the one you want. Underneath there is a little cloudy whitish water. You smell it, it's a little sour smell. That is the one, LAB, lactic acid bacteria. Now, the number of the LAB in there is not the greatest. So you want it to multiply. It's a large quantity, large number. So step two, you want to buy some milk. Ideally, if you have the John Caverly's farm, the fresh milk that you squeeze it, that would be the best one.
0:49 But if you don't have it, go to the Walmart or someplace. They have already, you know, the milk. If you buy the milk like this, it has what? Raw milk. Raw milk is the best one. but they have pasteurized milk like that in the Walmart milk. Still, it works okay. So if you can just buy one gallon of milk, it costs about, I think Walmart costs about $5.43 or something like that. So buy one gallon of milk. Then now you have this one, step one, L.A.B. here, right? So you got one gallon jar that's an empty jar.
1:37 This is one gallon is how many quarts or how many liters is it? Four quarts. Four quarts or four liters. If it's a milliliter, that's a 4,000 milliliter, right? Don't put it all, only put two and a half quart out of the four quarts. Okay? 2.5 quart here, 10% of the 2.5 quart is about how much? It's 2.5 quart or 2.5 liter means 2,500 milliliter, right? It's a liter, a milli is 1,000 times.
2:23 So it's 2.5 liter is 2,500 milliliter. 10% of that is how much? 250. Most of the water bottles that we buy from Walmart or something, that's 500, is it? 500. Yeah, that's 500 milliliters. So half of them is 250. So all you have to do is 2.5 liter here, and then add it from here, half a bottle of that bottle water, okay?
3:05 Audience: Which is one cup.
3:07 Dr. Hoon Park: Which is, yeah, one.
3:08 Audience: One pint.
3:09 Dr. Hoon Park: Yeah, that's a one, yeah. Whatever it said, it said 250 milliliter is the exact amount, 10%, okay? 10% comes from original LAB here. Put it in here and then you cover like this. This one you cover, and the rubber band, or cover like this. This one, put it the same side of the first LAB. Okay? Shaded area, room temperature, not outside direct sunlight. Okay? This one, five days. Five days. Now I'm talking about the tropical area that we making this if you cold area like maybe you go now in the
3:58 Colorado or New York I think it's kind of started to be cold yeah cold area is taking a little longer time but I'm talking about this tropical Hawaii then And this is one day, and this one, five days. After five days, if you open it, look at it, there is about one inch thick, whitish lump develops. You just plug it in the whole thing. So if you shake it, it just, you know, one big chunk is just there, almost like a tofu. Almost like tofu. But if you smell it, it's a sour smell.
4:44 If you taste it, what it is, is yogurt. Yogurt or cottage cheese. That's what it is. So first step, LAB. Second step, milk 2 and 1 half liter. 10% of that 250 milliliters is out of here. And then five days you cover it. And then after that, it's done. So all you have to do is this finished part of this cheese or yogurt, you have to strain that liquid here to collect.
5:32 If you have a cheesecloth or you know like that I usually use I bought from the Ace Hardware. They have a paint strainer. It's a big kind about four dollars. It's a pouch. So all I have to do is just put this paint strainer and then I tilt it. then fluid will come out, the lump will stay there and then just finally if I tilt it real hard then the lump will come out. Anyway you got collected this fluid here and it's yellowish little cloudy, it's a sour smell fluid, liquid, that's a hundred percent lactic acid bacteria
6:21 it finished. Now what are you going to store How are you going to store? There are two ways to store this finished product of LAB. Number one, you store in the refrigerator. You can store many months. So you can use that way. And then number two, if you have to take it to some place. I went to the Philippines to have a medical mission trip. and I need to carry that one. There's no icebox I can carry with it. So I put, you know what the molasses, the liquid sugar, molasses and LAB one to one ratio.
7:10 One to one ratio, then you can keep it in the room temperature a long, long time. Or if you don't have a molasses, brown sugar is another way. So almost one to one ratio you can mix it.
7:24 Audience: How long is the shelf life for that?
7:26 Dr. Hoon Park: That's almost...
7:27 Audience: Ever?
7:28 Dr. Hoon Park: Well, I cannot say forever, but many months you can keep it as it is. So that's two ways of storage. Now the next question is how to use it. How much take it, right? One to one thousand. when you spray to the plant, one to one thousand. So if it's a one liter or one quart, all you have to do is one cc. That's that's effective, very very effective. But if you want to drink yourself, because I'm telling you this is a really really good thing to do for your intestinal system because we knowingly or unknowingly we expose so much antibiotic or you
8:23 know pesticides and all these things our normal gastrointestinal system which normally has you know, three percent of your body is a germ. Your body, normal healthy people, they analyze and then they have about 3% of their weight is the germ. Million, zillion different kinds. They don't even know what's the name of it, but they categorize good germ is about 85%, bad germ is about 15%. That's the way our body is maintaining okay, harmonious. Now, the, you know, if you have a, everything is natural, that's the way it is, but
9:10 But practically now, everybody you have exposed so much antibody because doctor give a prescription. Because you eat the meat, in the meat, if you go to the meat raising place, what do you see? They just pour the antibody to their feed. So you ended up to have all small amount antibiotic stuck in the meat that you eat every day. So it's just practical reality. So assuming that's happening every day in our life, our bowel system is disturbed by this extra, you know, killing the antibiotics or pesticides, whatever.
9:59 So if that's the case, what is the solution for that? You just have to supplement. good guys. That's LAB. That's a good germ in our body. So what I usually do myself, I talked already in my testimonial that I started drinking myself. I drink about one tablespoon or two tablespoons, which is about one ounce, with my meal or after I eat the meal. Especially if you go to the big party, has so much delicious food, you just drink you know, the overeating, then what do you feel? My stomach is kind of
10:44 bloated and this uncomfortable, you know, sometimes it's cramped. These things happen but if you drink this extra one ounces whenever you eat overeat, within 10 minutes you feel very comfortable. That's a very immediate, almost immediate result. I have felt that way. And I told the people that I'm 76 years old now, but 50 years ago, I removed my stomach 80% because I had a perforated duodenal ulcer. And so I had to remove my stomach 80%. So I have lived about 50 years with 20% of my original stomach.
11:30 Now, after operation, I was fine in terms of pain in my stomach and everything. But side reaction after stomach operation is that I feel very cold in my feet when I leave the cold area. Before I moved to Hawaii, I lived in Maryland, Baltimore. And I had so cold in my feet, even summertime I wear this thick socks myself. and then my stomach is kind of cold too and then diarrhea develops. So you know I really that's a chronic recurrent problem of mine and after I learned this one gee this one I mean the LAB does a good
12:19 thing for the plants and I eat this in direct way why not I pick myself. So I started taking this about one tablespoon of that LAB into the water. It's not 1,000, I put a lot more than that, 10 times more, 15 times, all right. And then I drank it, I felt good. I felt very comfortable. So I continued to take it, and you know, I had to, anybody heard of Crohn's disease? That's a pretty bad gastrointestinal problem. One of my patients, I work in the University of the Nations
13:04 in Kona, and then he come to me, I always have a stomach problem, my diagnosis was Crohn's disease, so I have diarrhea now. So I told him, I cannot guarantee you, but you know, I gave myself this one and it helped. So would you try? I gave him my LAB, and so he tried, but one week later, he came to me. You know, I felt so good in my whole life. Yeah. So I said, ah, that's good, because, you know, when you have really some trouble, you can't tell somebody else that, you know, I have diarrhea. But it is something that very easily helpful.
13:55 So if any of you have trouble with diarrhea, stomach cramps, and things like that, I want you to try. See whether that helps.
14:05 Audience: What's the ratio for human consumption?
14:10 Dr. Hoon Park: This is not my research-derived data, but it's just my own experience. Just think about it. I drink about one tablespoon or one ounce. What ingredient was there that's so harmful to me? But Master Cho teach me 1 to 1,000, which this much amount is one liter. It's a very small amount. But I should take a little more than that. So I drink one tablespoon each time. or sometimes I take a couple of tablespoons. Mix with the water, I mean, about this much water,
14:56 whatever I drink usually. And then, so actual amount of the LAB is only one tablespoon to two tablespoons each time I eat. So that's my standard recommendation, because I'm doing okay, I recommend other patients that come in to me, then you try with the one tablespoon.
15:16 Audience: Do you have to use dairy milk or can you use other than?
15:20 Dr. Hoon Park: I think milk is all the milk.
15:22 Audience: Soy, coconut, anything like that?
15:24 Dr. Hoon Park: I haven't tried soybean milk but there's no reason why you cannot do that.
15:30 Audience: Goat milk?
15:32 Dr. Hoon Park: Goat milk is fine.
15:34 Audience: Other than animal, you can use non-dairy?
15:38 Dr. Hoon Park: That I have not tried. But I think nutritional value, I think, might be [unclear]. But anyway, so lactic acid bacteria for the plant, for the natural farming, is you can use any time. You can use seedling time, you can use planting time, you can use growth period time, you can use any time of the year. you can use it. Only time you should not use it is before you're harvesting your fruit. When you harvest your fruit, you want to have a sweet taste, right? If you use it,
16:26 spray the LAB before you're harvesting, two weeks before or something, then your fruit becomes less sweet and if if that's a case you cannot you know sell this market so only time that recommend not to use is before harvest the fruits but other than that anytime you can use. Okay? Any question?
16:51 Audience: The benefits for the plant?
16:57 Dr. Hoon Park: I told you already, you know, it helps the root system develop well, root of the plants. Okay? It makes the leaf size bigger, thicker, and then shinier. Isn't that good effect? Yeah. So in other words, the LAB is a good guy for the plants as well as a human.
17:24 Audience: Yeah. You don't have to cook the milk, right? You don't have to sterilize?
17:29 Dr. Hoon Park: You can go raw milk. But some people ask me, I'm allergic to milk, so I'm, you know, I'm milk intolerance, I have a problem with you know lactose intolerance after you fermenting you can still use it You can. Yeah, I asked them to, okay, try it, because it's different from milk. LAB is not the milk. The LAB bacteria use that up. I mean, they eat that and they change the form. So it's not a milk itself. It's just a bacteria. So you can try.
18:09 Audience: But you can use pasteurized milk?
18:11 Dr. Hoon Park: You can. Yeah. Yeah I've used the pasteurized milk. But ideally if you have a raw milk, just go for it. That's even better. Any other questions?
18:22 Audience: Yeah. I know it's really, really good for animals. Can you talk a little bit about that? Like how to use to implement animals?
18:31 Dr. Hoon Park: I'll just say one information that I got from Korea. There's one pig farmer. I just read an internet article. Pig farmers, 1999, he started a pig farm. He had 150 pigs starting. And then he started feeding LAB for the pigs. 2007 or so, about eight years later, these pigs not diseased. They don't catch disease very much. And he did not give immunization. He didn't have to give immunized.
19:20 He was so successful. His pigs increased to 15,000 pigs in [19?] years. So he's very popular pig farm in Korea. I wanted to go to visit next month. I'm going. But in other words, LAB is good for any animals, human beings.
19:44 Audience: You just put it in your water, like the same ratio?
19:47 Dr. Hoon Park: I don't know how he gave, but he developed his own uh you know the lactic acid bacterium product so I don't know but you know LAB is LAB, so you don't have to pay a lot of money to buy it. So, you know, you can buy this probiotic in the store. I'm not against them. Only thing is, I'm really concerned because they use so much additive to make it taste good, to have a nice color, to preserve longer time. They have something added to it. So not only you pay extra money but also it's not that natural why not use this one?
20:37 Audience: What do you do with the white thing? You have to use the liquid?
20:41 Dr. Hoon Park: Yogurt? Yogurt? You can eat. You can eat. If you don't want to eat it, you give it to the animal. The animal will love it. They love it. And even plants, you give it under the ground and then that's great. Yeah, so I mean you know, LAB is a great stuff. So especially if you make that simple, just rice, the milk.
21:12 Unnamed presenter (next station): Or you can feed your animals. But then make sure there's no colorful stuff growing on top. No pink, no green. Red. Make sure the top is white.
21:28 Audience: Okay, and then the liquid is my LAB.
21:31 Unnamed presenter (next station): Yes.
21:32 Audience: And that goes in the fridge unless I want to go one-to-one brown sugar, in which case, good forever.
21:37 Unnamed presenter (next station): Yes. Okay. So you need to invest in brown sugar.
21:43 Audience: Yeah, and brown rice vinegar.
21:45 Unnamed presenter (next station): Yeah, and the brown rice vinegar.
21:46 Audience: And vodka.
21:47 Unnamed presenter (next station): And vodka.
21:48 Audience: Even with that investment, it's still inexpensive.
21:50 Unnamed presenter (next station): It's so... it just... this thing lasts forever. I don't know, I sometimes... I think I just finished the fish amino acid that I made in 2009 or 2010. Yeah, it lasts that long. Yeah, it's amazing. Just in one month, you can make most of the inputs. in one month. Just fish amino acid, FAA, and then OHN. That takes longer. Otherwise, you can finish everything in one month. And then you can relax and farm, just grow stuff. It's so much fun.
22:38 And when you're farming, you keep moving. I always work early in the morning and you don't really have to exercise anymore. You're always moving. Yeah. I mean, when you see, you cannot just say, I'll do it later. No, I gotta do it now. I gotta help this one. Yeah. Somehow that way. And then you get more sensitive and you have more love in your heart somehow. And then your family gets along way better. I don't know why. They're getting the nutrients. You don't need a psychiatrist. Just [unclear] together.
