Ohn :How to store ohn in a tropical country like mine, Senegal ?
Top answer
From the KNF library
Drake's answer on the fridge stands. The library adds notes on containers, light and aging.
The Cho recipe text says to store OHN in jars, glass bottles or PE containers that light cannot penetrate, at 1 to 15°C, with no direct sunlight and enough ventilation. (Cho, Recipe, p. 28) The same text also says "airtight" on the next page, so it is unclear how tightly to seal. (Cho, Recipe, p. 29)
Storage helps OHN. Sealed OHN gets smoother and more potent with age, like whiskey. (Office Hours Ep. 9, 36:10) So dilute it more as it ages. (Office Hours Ep. 9, 36:10) The manual gives 1:1500 instead of 1:1000 once your OHN is older than 6 months. (Student's Manual, Basic Course, p. 27)
The library says nothing about storing OHN without a fridge at 25 to 35°C, or about freezing it.
