Making vinegar
Top answer
From the KNF library
Drake sees no reason to hold back. He says the difference between FFJ and FPJ is "none that matters" because it is all plant food. (Office Hours Aug 2025, 50:58)
He also prefers vinegar to rewashing. After draining the juice, he says it is better to turn the leftovers into vinegar than to rewash the mash for more juice. (Office Hours Oct 2025, 32:39)
On the why, Drake says a fermented liquid left open to air turns to vinegar. Alcohol only stays alcohol if sealed airtight. (Office Hours Ep. 17, 30:20) He also says adding water to FPJ turns it into vinegar. (Office Hours Ep. 28, 54:50)
When the vinegar is done, strain off the solids. Then lightly raise the temperature so scobies stop growing back. (Office Hours Ep. 53, 7:33)
The library gives no ratio for residue itself. It says nothing about low sugar in the leftover material.
