looks like mould forming on the surface of my banana fruit vinegar......
i finished a batch of banana flower fps not too long ago and decided to use the remains to make vinegar. I replaced and equal part of rain water as the amount of fpj serum extracted. the solids at the top that are actually slightly obove the liquids are forming what looks to be mold at the 2 week marker. did i add enough water? could the rain water have been contaminated?

The library's banana vinegar chart calls for 2 parts water to 1 part banana FPJ. (Cho's Solutions, p. 8) Equal parts water and serum is less water than that. (Cho's Solutions, p. 8)
Drake's cleanser recipe uses the same ratio: one part finished fruit food to two parts water. (Office Hours Ep. 66, 1:09:35) It ferments three to six months, until pH drops below 2.4. (Office Hours Ep. 66, 1:09:35)
The chart also says to speed things up with a splash of living vinegar or a mother scoby from an existing vinegar. (Cho's Solutions, p. 8)
The library does not say why this mold formed or whether the rain water caused it.
