Chicken House
Great Natural Farmers! Great!!
I am kind of confuse as to the direction of the chicken house where its north-south. My question is does the cardinal direction change with region or its universal. I understand that the north-south is suppose to be from the direction the sunrise and the direction the sun set, which to my understanding the sun rises from east to west.
Kindly enlighten me please.

The idea is to get the sun to go over the chicken house so a beam of sunlight will come through the split roof to go across the floor each day. In the Advanced Chicken Workshop by Master Cho, he explains the building design in the first lecture of the playlist.
Also, Master Cho's Slides on Chickens may be a helpful resource as well.

The library gives the purpose of the roof light. Cho's poultry house is designed to receive sunlight from the roof. (Cho, Theory, p. 130) Ultraviolet rays from that light sterilize the ground of the house. This keeps the ground in a pleasant living condition. (Cho, Theory, p. 130)
The roof also moves air. Heated air moves out through the roof while fresh wind flows in from the side window. (Cho, Theory, p. 102) So the roof opening does two jobs. Light comes down and hot air goes up and out. (Cho, Theory, p. 102) (Cho, Theory, p. 130)
The library does not say whether the north-south direction changes by region. It gives no compass rule for the house. That question needs Drake to look at your site and latitude.
