Fermented Seawater, Brown Rice Vinegar, Fish Amino Acid

Drake opens with Master Cho's recipe for fermented seawater: seawater diluted 1:30, rice wash water at 1:200, and FPJ (mugwort or dropwort) at 1:500, held half a day in summer or two to three days when cool. He explains brackish water like Puget Sound works too, since estuaries mix fresh and salt water and carry more microbial life, and that the top inch of seawater holds the most microbes while water 10 feet down holds more minerals and less plastic.
