Storing KNF Fruit Vinegar

We made some KNF fruit vinegar (with pome fruit instead of bananas) and are wondering what the best way to store it is. We added apple cider vinegar with the mother when making it, and a scoby developed in our brewing container. Is this something you would store with the rest of the fruit vinegar solution? Thanks in advance!

From the KNF library

Master Cho's banana vinegar page says to keep the vinegar in a cool place out of direct sunlight (Cho's Solutions, p. 8). The Student's Manual adds that the place should be dry (Student's Manual, Basic Course, p. 41).

On the scoby, the library uses it at the start of a batch. Cho's page says a splash of living vinegar or a mother scoby from an existing vinegar speeds up the process (Cho's Solutions, p. 8). That is the job your apple cider vinegar with the mother did (Cho's Solutions, p. 8). Drake would save the scoby to start your next batch (Cho's Solutions, p. 8).

These pages describe banana vinegar, not pome fruit. The library does not say whether to keep a scoby in stored vinegar, whether to pasteurize, or how long the vinegar keeps.

Thank you! We separated the scoby and have been applying the solution through our fertigation system.
