OHN question from book
I have a question. In your KNF Recipe Book, in the OHN section it states "Tincturing vessel is refilled 1/3 from big vessel • do not repeat this step the last time!" Shouldn't this say "Tincturing vessel is refilled to 2/3 full from the big vessel • do not repeat this step the last time!" Am I missing something? I have watched 5 of your 6 begining videos, and bought your book, and am learning slowly. Am making OHN tinctures now from garlic, cinnamon and ginger. Can't get angelica or licorice root here in Costa Rica. Thanks for all your info. I would probably have given up were it not for your videos. Bill McD

From the KNF library
The library's notes match the book as printed. Drake's Cho's Solutions page says the tincturing vessel is refilled 1/3 from the big vessel. (Cho's Solutions, p. 10) A second page says to refill to 1/3 with the pour off, then refill to the brim with new vodka. (Cho's Solutions, p. 9)
The 2/3 figure in the library belongs to the first fill. Brown sugar brings each herb jar to 2/3 full after the herbs rehydrate. (Student's Manual, Basic Course, p. 25)
Drake suggests finding the same or a similar herb growing wild near you when you cannot buy the traditional ones. (Office Hours Ep. 22, 44:06) A mix without Cho's herbs is your own medicine, not OHN. That name is reserved for Master Cho's licorice-cinnamon-angelica recipe. (Office Hours Ep. 123, 44:44)
The library does not say whether 1/3 or 2/3 is better for the refill, or why the book words it as it does.
