Master Cho's method does not seal the ferment from air. It relies on facultative anaerobes, which grow through the whole solution. (Office Hours Ep. 49, 47:33)
The Foundation's recipe starts open. Leave the rice wash bowl in the open air for 24 hours and do not cover it. (Student's Manual, Basic Course, p. 17) The jars of whey and sugar get a paper towel and rubber band, so LAB can breathe. (Student's Manual, Basic Course, p. 17)
Cho's recipe book says LAB are conditionally anaerobic, so they can also survive with oxygen. (Cho, Recipe, p. 53)
Together, these point to a ferment that gets some air, not a sealed one. (Office Hours Ep. 49, 47:33) (Student's Manual, Basic Course, p. 17)
