FPJ
How should FPJ that I drink be stored at room temperature or in fridge?
Top answer
if super saturated properly, they store well at room temperature.
a fridge is ideal, but not always affordable.
without supersaturation, they store for a few weeks before turning to vinegar or alcohol at room temperature. in the fridge this will be much longer.

Sugar decides where FPJ lives. Drake recommends the fridge for anything not resaturated with sugar. (Office Hours Ep. 4, 45:34) For long-term storage, the Hawaii manual adds an equal weight of brown sugar to keep FPJ from souring.
With plenty of sugar, FPJ can keep about a year in the fridge. (Office Hours Ep. 12, 31:40) One speaker made FPJ with muscovado, stored it at room temperature, and got about six months without it turning to vinegar. (Office Hours Ep. 36, 1:04:00)
- Cover the container with a breathable lid. The microbes keep releasing gas, and a tight lid can burst the jar. (Student's Manual, Basic Course, p. 37)
- Keep it dry and cool, out of direct sunlight. (Student's Manual, Basic Course, p. 37)
- White mold on top is usually fine. Add more sugar or hold the temperature steady so free moisture stops pooling. (Office Hours Ep. 76, 7:49)
The library does not say how long drinkable FPJ stays safe at room temperature.
